If you right-click on a tile to customize its settings, you find options to resize, run, pin, unpin the tile but there is no option given to rename the tile. You can’t change text labels of Start Screen tiles.

The best thing to do is download all your icons, then create a folder with them all inside before using them. Also make sure you’re saving them to a place that’s easy to find. The download page of your icons should tell you or allow you to choose what format you’re downloading.
